Fat, Oils, and Grease Workshop - Miami-Dade County RER & DERM

This was a workshop hosted by the Town of Cutler Bay in collaboration with Miami-Dade County's Department of Regulatory and Economic Resources (RER) and Department of Environmental Resources Management (DERM) on May 18, 2026, focused on the fats, oils, and grease (FOG) program. The meeting covered the regulatory framework, permitting, inspection, and compliance processes related to FOG management, which is critical to protecting sewer infrastructure and the environment. Key procurement-related topics included the integration of permitting systems, the use of approved grease interceptor technologies, and the county's efforts to streamline and support small businesses through funding programs such as Strive 305, which offers up to $75,000 in capital for eligible businesses to comply with FOG regulations. The workshop also discussed enforcement policies, including consent agreements as alternatives to fines, and the potential for future solicitations by the Miami-Dade Innovation Authority to identify and implement new FOG management technologies. Attendees were encouraged to engage with county resources for permitting assistance and training opportunities, highlighting ongoing efforts to improve regulatory compliance and support economic development in the food service sector.
